Cheesy BBQ Chicken Quesadillas


Quesadillas are a MUST for when I want a tasty lunch/snack/dinner but can't be bothered to make something time consuming.

'Queso' means 'cheese' in Spanish and a quesadilla is a heated tortilla with melted cheese inside. Besides cheese you can put literally anything in them that takes your fancy. You can make them as elaborate or as simple as you want - it all comes down to what you wanna put in them!

I love cheesy BBQ chicken quesadillas and I would recommend them to anyone who doesn't wanna spend a lot of money or time making something delicious. Like I said before, you can put anything in them; chicken, beef, or leave out the meat entirely and put some roasted vegetables in them to make a delicious vegetarian cheesy quesadilla. You can also use whatever sauce you want - if you want sauce at all. I've recently had chicken and sriracha which was mouth wateringly good. They are so versatile and tasty!

Quesadillas are also ideal for students because of how little they cost to make. Is there anything bad to say about them?

Time: 10 minutes
Yield: 1 serving

What you'll need:

  • A tortilla (of your choice)
  • Grated cheese (of your choice - I used extra mature cheddar because I love strong cheese)
  • Cooked shredded chicken 
  • BBQ sauce 
  • Cooking oil

What to do:

  1. Pour a little oil in a large frying pan and spread it around the whole pan
  2. Place the tortilla into the pan and add the filling in layers: cheese, chicken, sauce, cheese.
  3. Flip the uncovered part of the tortilla over the other (like you're folding an omelette) and allow the tortilla to 'cook' on the one side (about a couple of minutes) then flip the quesadilla over and allow the other side to cook for the same amount of time.
And that's it! 

NOTE: If you want to make a larger quesadilla, follow steps 1 and 2 as normal but spread the cheese and the rest of the contents over the whole tortilla. Then place another one on top, flip it over and cook the other side for 2 more minutes or until the cheese has melted inside. This is a little more complicated (as flipping it over can be difficult) so you could always repeat the steps above another time to get 2 servings. I do this if I'm having them for dinner as there's more to eat!
