Perfect Shortbread Biscuits
'Perfect Shortbread Biscuits' may seem like a bold statement, but trust me; these biscuits will have you going back for another as soon as you've finished one. They're buttery, sugary and so delectable. And with this method, you're sure to get perfect biscuits every time.
These never last very long in my house. No joke, I bake them one day then by the end of the next they're already gone!
If you fancy baking but don't want to mess around with fancy, elaborate recipes then shortbread is the thing for you. With only three ingredients they're super simple to make and lets you stretch your baking muscles without pulling said muscles.
A lot of shortbread recipes call for you to cream the butter and sugar together before sieving in the flour and forming the dough. However, I've found that using the 'crumb' method is much more effective in getting a really short dough - perfect for shortbread!
This recipe makes roughly around 20 biscuits depending on the size of your cutter.
What you'll need:
- 180g plain flour
- 55g caster sugar, plus some extra
- 125g unsalted butter
TIP: unsalted butter is best when making shortbread, I've made the mistake of using salted butter and the result is - well - salty. Not want you want for a biscuit!
What to do:
- Weigh out all the ingredients and put into a large mixing bowl.
- Start rubbing the ingredients together to form a breadcrumb-like consistency (as if you're making a crumble mixture).
- Once you have 'breadcrumbs', scrunch the mixture together until all of it is combined into a dough that you can roll out.
- Flour a flat surface and roll the dough out until it's about 1cm in thickness. Grab your cutter (whatever shape you like) and start cutting out the dough.
- Put the shaped biscuits on a sheet on baking paper on a tray and then whack in the oven on 180 degrees fan for 15-20 minutes, or until the biscuits are golden in colour.
- Once out of the oven, the biscuits will still be soft but they will harden as they cool. This is the perfect time to sprinkle over some extra caster sugar to make them a little bit more special.
And there you have it - perfect shortbread biscuits every time you make them. You can't really go wrong!
