Spicy Sausage Pasta


This meal is the first time me and my sister have properly cooked together AND not followed any pre-existing recipe and the result was pretty damn delicious. This is definitely going to be made many more times judging by everyone's empty bowls!

In all honesty, we made this because we were at a loose end as to what to cook for dinner; no one had any idea what they fancied so me and my sister hit up the supermarket on the hunt for anything to give us some inspiration. After strolling past the peppers heading towards the ready meals, Jess suggested cooking sausage pasta. And that was when the idea of this delicious, spicy sausage pasta was born.

This meal is very cost effective and good for you - much better than the ready meal we were going to end up with!

Bonus points for this recipe as you can simply leave out the sausage and have an equally delicious vegetarian spicy tomato pasta - I would gladly eat it either way.

What you'll need: 

  • 8 pork sausages 
  • 2 bell peppers
  • 1 tin chopped tomatoes 
  • 500g passata 
  • 2 cloves garlic
  • 1 teaspoon paprika 
  • 1 teaspoon mixed herbs/italian herbs 
  • 1 teaspoon sugar 
  • 1/2 teaspoon cayenne powder/chilli powder
  • 500g fusilli pasta 

What to do:

  1. Cook the sausages in the oven according to the cooking instructions on the packaging. While they're cooking, it's time to do the sauce.
  2. Fry the garlic in some oil for about 2 minutes then add in the tin of chopped tomatoes and passata and mix together.
  3. Add in the sugar (this brings out the flavour of the tomatoes) then the herbs and spices. Stir this in then add the chopped peppers. Let it simmer for about 15 minutes. 
  4. While this is simmering, boil the water for the pasta ready to cook it later. 
  5. When the sausages are done, chop them into pieces and add to the tomato sauce. Continue to simmer while the pasta cooks. 
  6. When the pasta is cooked, drain it and then add it to the sauce, mixing carefully so as not to break up the sausage pieces. 
  7. Serve and enjoy!
