Blueberry Nuffins


Blueberry Nuffins. Delicious, gooey, moreish. These little cakes will have you going for another and another and another. They're super simple to make and the result will have you dribbling for more!

This recipe was originally for blueberry muffins but one thing led to another and they didn't exactly come out as muffins... Leading me to call them 'blueberry nuffins' because they look nuffin like muffins!

This recipe makes 24 cakes and by the end of the next day they were all gone... seriously! That's how moreish they are; my family kept eating them! Even my brother, who is adamant he doesn't like blueberry muffins, cannot get enough of these. This makes me so happy because it means that I turned something he didn't like into something he can't get enough of!

Homemade cake is better than shop bought cake any day of the week. However, the crunchy top layer of cake and then the sticky blueberries at the bottom are a match made in cake heaven - trust me.


Also I started making these without checking if there were any cake cases in the cupboard and ended up using baking paper cut into squares and stuffed into the cake tray. It resulted in weird, odd shaped cakes but who cares? The way they look just adds to their appeal, in my opinion. Of course, if you actually have cake cases you can use them, but there's nothing wrong with using your own initiative once in a while!

What you'll need:

  • 110g butter
  • 250g plain flour
  • 250g caster sugar
  • 2 teaspoons baking powder
  • 2 medium sized eggs
  • 125ml milk 
  • Dash of vanilla extract (optional)
  • 225g fresh blueberries

What to do:

  1. Preheat the oven to 180 degrees fan and line the cake tray with cake cases (or do what I did if you want the same, wonky result as me). Sieve the flour and baking powder into a bowl and set aside.
  2. Cream the  butter and sugar together until light and fluffy, the add in the eggs and mix together really well. Then add the milk and vanilla extract and mix together again.
  3. Fold in the flour to keep the mixture light, then stir in the blueberries gently (so as not to crush them up)
  4. Put a splodge of the mixture in each of the lined cake cases then whack in the oven for about 25 minutes, or until the top of the cakes are golden brown and spring back when you poke them with your finger. 
Et voila! 



Just looking at the pictures makes me want to bake another 24 right now - I could make myself sick eating them, I have so little self control when it comes to delicious food....
